Easy Homemade Spanish Rice

Rice was always an ingredient that I struggled to get right. It either was way too mushy or crunchy. I grew up having the 10 minute rice in a bag and never really attempted to make anything on my own. It wasn’t until I became an adult and got a rice cooker for a wedding present that I started making it on my own. And by making it on my own I mean using the rice cooker, lol! For years I wanted to make a great Spanish rice, like the type you get in the restaurants but could never find anything that really worked. The packaged “Spanish Rice” in the stores that only required you to microwave it was just so nasty to me! Finally one day I stumbled across a recipe online that was very simple straight forward and seemed easy enough. It has been so long I have no idea where I found it but over the years have tweaked it to my liking. Hope you enjoy!

– 1 cup of uncooked long grain rice
– 1/4 onion finely chopped

I usually use 1 whole onion for my entire meal – chopped up and divided, if you want more you can add as much as you would like.
– 2 Tbsp cooking oil
This can be anything from olive oil to vegetable oil. I usually eyeball the amount, just need enough to coat the pan
– 2 Tbsp (or more if you want) favorite salsa (I use mild)
This is a new discovery. I use to make this recipe with tomato sauce. It gave the rice a nice color but lacked on flavor. What I usually would do is buy a small can of tomato sauce use half of it and put the other half in a small bag to freeze, that way I had it on hand. Well one night I decided to make this I totally forgot the tomato sauce. I had to scramble what to do. I had some salsa in my fridge and thought “Hey, why not.” I say 2 tbsp but again you can decide on much you would like. I usually do two really big spoonfuls (see picture below). It not only gives it great color but also the chucks of tomato and green pepper give it a little more spice and flavor. Now like I said above I use mild salsa. If you prefer spicy rice then go ahead with what you like but it will give it a different flavor and maybe a little too spicy, I am not sure.
– 1 tsp garlic salt
With the spices, I do not do exact measurements. I take the 1/2 tsp spoon and do 2 big scoops for garlic salt, and 1 each for cumin and oregano. This just gives it a little more flavor and this isn’t baking so you do not have to be exact.
– 1/2 tsp cumin
– 1/2 tsp oregano
– 2 cups water
– Good flat pan with lid
I use the same pan overtime I make this dish so I’ve got it down to a science. It needs to be big enough to accommodate 2 cups of cooked rice.

Directions with pictures:

1. Set out all your ingredients to be ready to cook, this is important because of timing.
2. Turn on stove to heat pan to medium heat.
3. Add oil, rice, then onions. Mix together and cook (stirring frequently) for a few minutes until rice is golden brown without burning it.
4. Next, add your salsa and stir quickly. It will sizzle and continue cooking.
5. Add your garlic salt, cumin, and oregano mixing it together.
6. Add the water slowly until completely mixed. This will also sizzle until completely incorporated together.
7. Allow the mixture to come to a good boil, turn stove down to low and place the lid on top.
8. Set timer and cook for 15 minutes. DO NOT lift up the lid no matter how tempted you feel. This is very important. If you want to take the entire pot and shake it (holding the lid) that’s a great way to stir the contents inside without lifting the lid. I tend to do this towards the end when so the bottom doesn’t burn, but if you really have it on low then it shouldn’t.
9. Once the 15 minutes are up, take pot off the burner and set aside for an additional 5 minutes (again not taking the lid off your pot). During cooking and sitting time is a great time to make your other dishes.
10. When ready to serve, take lid off the pot and stir the contents. ENJOY!!!

Deal of the Day! Target Shoe Madness!


So there are only certain times when I go into a store and get so overwhelmed (in a good way) at what’s on sale I can’t see straight. I just decided to go into Target because I really didn’t have anything better to do while my son was in school the other day. I thought I would just walk around, check out the clearance sections and then head to the library and read for a bit. WELL. I was wrong. I walk to the shoe section, okay nothing really going on then I notice “Cartwheel take an extra 20% all clearance shoes.” Ok, let’s look around. I find bigger shoes for my son super cheap, then there is an entire ROW of women’s shoes on clearance. Now, I am almost 31 weeks pregnant, I can barely put my socks and shoes on every morning now I have the prospect of trying on dozens on shoes, lol. So I take a deep breath and look at my options.

Here’s my shoe purchase breakdown (don’t worry I didn’t go THAT crazy, lol) :

Shoes for my son:

Pair of grey slip on boat shoes (size 1 he can wear now): $4.78

Pair of black nicer tennis shoes (size 2): $5.98

Pair of sports black tennis shoes (size 2): $7.18

I love it when I can find shoes for him for less than $10 a pair!

Here’s the shoes for me:

Pair of pink ballet shoes to wear to my baby shower: $4.06

Pair of lined winter/rain ankle boots: $9.58

I’m super excited about the winter boots because I do not have anything like this. These will not only keep my feet dry but also very warm. Because the shoes are lined I most likely have to wear thin socks until I can wear them in a bit.

Grand total: $31.58!

So the price for maybe one pair of shoes I got us 5! Now you are probably wondering why I didn’t get my husband any. Well. He wears a size 14!! You cannot find that size in most retail stores like Target, they only go up to 13. So no shoes for him today, lol. I do find that Academy Sports has the best selection of shoes in his size that I do not have to buy online, which is awesome.

I am not sure how long the cartwheel deal is going on and make sure to use your Target red card to get an extra 5% off! I do not normally add this to my final total just because I tend to think about it as saving on the taxes at the end because it ends up taking most of the tax off the final price.

Pregnancy Update: Week 30!!


Hello everyone! Since only like 5 people read this blog, lol, I wanted to give you another update as to how I am doing. WOW! I made it to week 30! I can’t believe how fast time is going. It literally feels like yesterday when I took the pregnancy test and it said positive! I did not think that would ever happen again for me. Our family is very excited to bring this spunky little girl into the world. Here’s a little bit of what I am going through the last few weeks.

Wow, am I TIRED. I just cannot seem to catch up on any sleep. During the day I drag, like now, I am trying to clean the floor, and by cleaning the floor I mean sweep and vacuum, lol. Something that is supposed to take maybe 30 minutes has turned into an hour and I am about half done with the downstairs. I find I start and then before I know it I need to sit down and rest. I figured since this is one of my resting sessions that I would start to write another blog post. I am not keeping up with the housework like I would like to and I know it’s going to be a million times harder to once she is here, but I figure I need to do as much as I can.

What does not help right now is because I am so tired during the day I think I am going to go to bed early and get some good sleep, WRONG! The second I sit down to sleep, she’s either kicking like crazy, or I get so uncomfortable that I cannot fall asleep, so I toss and turn all night. I might get a 3-4 sleep stretch, then I have to pee, get up, my dog then proceeds to shake his collar (indication that he also has to pee), walk downstairs to the back door, let him out, walk back upstairs, lay down and is so out of breath that I have to calm down, an hour later I am sitting there wishing I could just go back to sleep! That seems to be a nightly occurrence, then my husband is up at 5am and I might have a couple of hours more sleep before I have to start my day, sometimes not so much.

On Sunday I starting having some slight issues that I knew I needed to ask my doctor about. This usually gears up my anxiety and it just makes matters worse. I decided to take it easy and not do anything but lay down and I think that helped. I decided to wait until today to see my doctor and hopefully everything is okay, which it is: heartbeat 150 and I am measuring on time. So yay! What’s going on is completely normal at my size and as long as it doesn’t continue or get worse, I am okay.

Everything else is moving right along, starting to slowly get stuff for her room and got her car seat in the mail the other day. I might do a review on it one day when she’s here but so far I absolutely love it. It might be a little heavier than I would prefer but it’s fine all I need to do is lift it enough to put it in my Snap and Go stroller so it’s no problem. I am so thankful for my best friend. I had my son and she had her son a month later, he ended up being a few weeks early and my son was huge from the moment he was born so I have been able to give her all of my son’s clothes. I have also given her several of my baby gear because she’s had two other little ones since then. She takes great care of all of it and now several years later now that I am pregnant, she’s giving them back to me! Very thankful and also very glad that items were used longer than just a few months. She had a baby girl and now she’s giving me all of her girl stuff which I am so very grateful for. Having her support means the world to me and even though we live one way about 1.5 hours away from each other, I still feel as close to her as we were when we lived in the same town. Moms really need other moms support, it really is the most important thing.

Looking forward to this weekend, Sunday is my baby shower! I am having a women only lunch at one of my favorite places La Madeleine! I’m so excited for the food, lol! But I am more excited about seeing the people at my shower. There are several people coming that I have not seen in a really long time and the fact that they are taking their day out to come see me just makes me feel really special. Not having my mom makes events like this a little sad and I try not to let it get to me and being surrounded by people who love me (and several who also loved my mom) just makes it extra special. She would be so excited and will have a very special place in my heart on baby shower day.

Digital Learning Days – Be An Active Parent in the Education Process


This blog post will be a little different from what I normally like to talk about. I wanted to venture into more than just recipes and good deals. Real issues that mom’s face in this day in age and how much my past affects the future I hold for my children. This particular post will get me on my soap box just a tiny bit, lol. Please note, this is just MY opinion. I am in no way a licensed professional or a doctor. My opinion might be different from yours and that’s totally okay! I will more than likely talk about things that have or have not worked for me in the past and might be beneficial to you, or it might not. I do have my Bachelors Degree in Child and Family Development and I am not only a strong advocate for my child but will work with children probably for the rest of my professional career. Plus the examples I use in this blog post are not from poeple I personally know, honestly it is from the strangers comments I read on the internet that make me afraid for our children’s future.

A great passion of mine is the advancement of a child’s education. I feel like education is something you can give your child (basically for free) that will stay with them their whole life. As we advance more and more in education it seems like learning gets tougher and tougher the earlier they start. What we might have done in Kindergarten back when we were kids – hardly compares to the amount of education they receive today.  Do not even get me started on what happens when they reach 3rd grade! It’s crazy how intelligent kids can be and what they know at such a young age.

I am personally blessed with a child who excels at learning. Now he definitely has his weaknesses in certain areas especially his speech but I am so proud of everything he accomplishes. It’s amazing to see that even though he struggles with his speech at times (he’s getting SO much better) it did not affect his ability to learn or even to read. Makes me fill with pride when his Pre-K teacher encourages his abilities and has him read to his class. He is a summer baby and having the option to when to send him to Kindergarten, I made the decision early on to have him be the oldest in the class rather than the youngest. This just gives him an extra year of learning and more prepared for when he gets into the higher grades. Even though he has been in a school like setting since he was a little older than 2, I feel personally that I need to also take a role in educating my child. This gets me to my main reason for posting….

Ok. I live in the south. Where is gets “cold” but by no means compare to what happens in the north. On that note, when it does get cold and precipitation threatens at our door, the state just doesn’t know what to do, especially the school system. Do we close, do we remain open and then struggle to get the kids home when it gets bad outside? NO ONE knows how to drive in the slightest bit of bad weather and we get made fun of by most of the country over our blunders with weather. What happens here most of the time is the rain turns into freezing rain and the ground is too warm so it sits there, then the temperature drops, causing dangerous ice on the roads called “black ice.” When driving you cannot see the ice on the asphalt especially when it is dark outside. This equals major problems for the school buses and people getting to the schools.

As an alternative, something awesome in my opinion,  they implemented a digital learning day instead of trying to tack on extra days of school. This way children can get their work for the day on the internet and work from home. Unfortunately this creates headaches for several people who feel they have too much going on in their personal or professional life to help their children with their homework. I get it, people have to work, but I am sorry, why can’t you help your children learn from ONE day? If you cannot personally do it, try a family member or friend. Whoever is watching your child can help them with their school work. Why is the education of YOUR child completely dependent upon what they are taught in school? I see these poor teachers online that not only have to help their children with their digital learning days but spend the entire day at their table with phone calls and emails from irate parents not wanting to educate their children or have any idea what their child does during their school day. What really gets me is reading comments from angry parents saying that have no way to access the assigned work because they DO NOT have a computer. Wow. I’m sorry how are you accessing Facebook? If you have a smart phone that can get on Facebook and take the billion selfies you post, you have the ability to access your children’s work. I know not everyone has this, but my printer is wireless and I can even print from my phone! But say since you don’t have a “computer” you don’t have a printer, but that still means you can still pull up the work and I don’t know COPY IT ON A REGULAR PIECE OF PAPER! Yes, all this requires actual time and attention from YOU but do you not see this is such a better alternative than putting extra hours or days onto your child’s already hectic schedule. Also, in this day and age, who doesn’t at least have a tablet or laptop? I know 2 year olds who have their own personal tablet. Just say you don’t for whatever reason, do you honestly not know a person by you within walking distance that would have one? Family, friends, neighbors, etc. who would be willing to let you use their electronic device for 30 minutes to grab the assignments online. Now since my child is in Pre-K he doesn’t have assignments yet, so I do not know the actual content in them, but I am sure it’s not that difficult. It would probably compare to what you received when absent from school because of sickness. I also hear that if you do not do the assignment for whatever reason, you will receive a paper copy when you return to school, so what is the big deal? I am sure most teachers are flexible for whatever excuse you try to create.

When did we stop caring about our child’s education? When did it become the norm that ONLY teachers were the ones teaching your children? You should be going over your children’s work every single day, reading to your children, actively asking them what they did during the day, what they learned, expanding their knowledge and interests.

A big reason why we chose as a family to have me stay at home was so I could have an active role in the learning on our children’s lives. No, I will never homeschool my children. That is just not for me, props to all those who do, but my son and I are so much alike that trying to teach him completely on my own would end in lots of breakdowns on both sides of the table. Maybe one day if we find that public school is just too much, we have a wonderful opportunity near us that is called hybrid homeschooling, combining homeschool days and classroom days during the week. I fully believe in your child learning from others, teachers who are outside the home, expanding your child’s mind and experiences. Some of the greatest people I have ever known have been the teachers in my life. My wish for my children is that they have teachers who molded their minds as much as particular ones in my life did. I feel like my role as a parent is the be an advocate for my child and supplement the knowledge that they bring home from school. Which means sitting down every day to work on their homework and providing supplemental activities.

A memory I have of my dad when I was in the 4th grade, he would sit down with me and help me with my homework. Sometimes he would not get home until 7:30, but he woudl at least go over what I did. Then when we were done, would read the next chapter. Yes, the chapter that we haven’t covered in class. At the time I was so annoyed because I didn’t want to do more work. But he told me in order to be successful in school you needed to prepare yourself for what was going to come. By reading the next chapter, he would explain things to me and help me understand what they were talking about. This way the next day at school, when we read the chapter as a class, I would already have knowledge on what is was about and a better grip with what the assignment would be. This also gives you the motivation to do school work on your own, which once you get into high school and college is exactly what you have to do. I had several classes in college where you on your own, had to read multiple chapters at a time, and it was NEVER discussed in class.  It would be on your one of three exams for the entire year. This meant a lot of your learning was done on your own.

Ok, I’ll get off my soap box, I am sure there are moments in this blog post you did not agrees with. I guess I am asking a lot from people who I am sure have “better” things to do in their lives, but as a person who takes education very seriously, please consider that your child’s education is probably the best thing you can provide for them. Also, remember that a teacher’s life is an extremely stressful at times. They not only have their children, but the 20-30 children they teach every day. Ask them if they need any help and make sure they know how appreciated they are to you. These people spend more time with your children during the day than some of you do and coming from this teacher, they hold special places in your heart.

Deals of the Day! – Target & Kroger Shopping!


Have you ever just had one of those good deal days? My first day to myself in almost a month, lol, I was able to get out and do some after Christmas shopping. My son missed the last two days of school because he got some sort of tummy bug, ugh, and then with winter break, I have not had much time for myself. I find that I want to go to a million places but I’ll be back in the store of the first place I am at and realize I have to walk all the way to the front to check out and I get very exhausted, lol! I have been known to find somewhere to sit down for a minute because well, pregnancy. LOL.

After Christmas you have a hit or miss selection of things in Target and sometimes you can find some good deals. So much is on clearance but at the same time they might hardly have anything. Well they had a small section of Christmas things 90% off and I was able to snag a couple Christmas items for super cheap! I continued my Target Registry in the store and they gave this is AWESOME bag full of goodies for the baby! Love free stuff, lol. I found some clothes for baby girl on sale – 3 pack of onesies for $4.48 which makes them about $1.50 each. Then a pack of 2 matching pair of pants (actually at another Target, score!) for $2.48 ($1.24 each) so she’ll have a whole new outfit for $2.75! They are also 6 months so I will have it for later on. This is what I did for my son, find things for less than $5 (especially if there is multiple items) and this way things aren’t so expensive and you develop a collection of clothes.

I have only recently started a $20 rule for my son with new shoes. Forever I was able to get his shoes second-hand and not cost much money, or on clearance ($10 or less rule) because his foot grew so fast I couldn’t afford to keep up. Well now that he’s in a Boys size 1 (ahhhh!) I can no longer really find decent shoes for him second-hand so if I can find a good pair of shoes for $20 or less I’ll get it. This whole summer/ fall he literally had one pair of shoes, lol. Academy Sports is a great place to find shoes for the whole family, great prices, and they actually will have my husband’s shoe size (14!!) in regular shoes. Most people don’t know is stores will carry up to 13 and there’s only certain places that will have 14 and over. I was able to find a good pair of shoes for my son for $20 and my husband a pair for $15!! Good shoe day!

I was excited at Target because I found of Luv’s diaper pack (40 count) that had a sticker that said “As Is: $4.48” wasn’t quite sure why it says as is because there is no tear in the bag. So I thought I would give Luvs a try because I never used them with my son. These were newborn size so they would go quick regardless of the brand and a great way to see if the baby will be sensitive to certain brands. I also had a $2 off coupon that did not work when I went to the self check out. The girl helping me was awesome and gave me all sorts of stuff that I only got because she was helping me, score! So for a 40 count I paid $2.48 so about 6 cents a diaper, which is a great price! I’ll let you know my favorite diapers for this new baby when she gets here because I’ve gotten several newborn/size 1 samples of different brands.

Speaking of diapers, I also got a pretty good deal on diapers at Kroger! For some reason their online coupons had 2 Pampers diaper coupons, one for $2 off and one for $3. I put them both on my list so I had them and since they were running their purchase 5 items get $5 off promotion, I picked up some and some other things. Their bags which are normally $8.99, on sale for $7.99 – they took both of my coupons! So I got the one bag of diapers for $2.99! Which made them about 9 cents a diaper! Which is a great price for Pampers. I am trying to think back to when my son was in diapers, but I think if I could find them around 12 cents a diaper that was a good price. Yay!

I love finding good deals because I feel like I am doing my part to some what contribute to my family. Being a stay at home mom has been the best job I could have ever asked for but it gets to me sometimes that I don’t bring any money into the house. By saving us money and really stretching my dollar essentially we have more money for our family for the bills and let’s face it when this baby gets here bills will increase for sure! What are Your New Year Goals?


Every year at this time I get super excited for the upcoming year and what I can do to improve my state of being from the previous year. I get so wrapped up in the spirit and chaos of the holidays a lot of my goals and ambitions get put on the back burner. I get so excited in January by February I tend to slack and by March, I am like goals who? It is my normal cycle and I am sure for many other people as well. I was never one to make “New Year’s Resolutions” because I find that creates way too much pressure to meet a task that will somehow get resolved? I am not sure what it exactly means but I know many people fail and then become worse than what they were before.

This is why I create goals. Goals are tasks that you constantly strive to reach. Sometimes goals take a really long time and sometimes you never fully achieve the exact goal you are reaching for but nevertheless they remain your goal. A good tip is to set up a main goal – like eating better. Well that particular goal is very vague and has lots of room to cheat. So then you create sub goals and ways to stick to your goal – like eating a certain type of way, or committing to making meals at home for at least 5 days a week, etc. Then you find techniques to stick to those goals – like writing down what you eat throughout the week, or creating shopping lists for meals to take to the grocery store, etc. This way you have a plan and more than likely stick to your original MAIN goal. Again, no one is perfect and to make yourself go crazy to try to maintain that level of “goodness” is difficult at times and you have to give yourself room to make a mistake.

Here is a small list of goals I have for the new year:

  1. Main Goal – Have a baby! This one is the easiest and hardest goal of them all. I am due probably at the end of March so there is not much time before the baby gets here. I of course what to go as long as I can and I pray every single day for a healthy baby girl, but you all know life doesn’t always turn out as your plan. So a more specific goal to this would be exactly what I said above, I pray everyday that we remain healthy and she is growing and thriving inside my body. I do as much as I can to make sure I do not do anything that could potentially harm my growing belly and I eat as healthy as I can. Pregnancy cravings are super real so if I have the caffeine free soda and doughnuts, I can’t help it! lol! I pray I have a successful surgery and we are both healthy and no complications when the time comes.
  2. Another major goal – Take care of said baby. lol. Yes, that should be a given but setting that goal remains me of the major change that will be happening in our family soon. My son is going to go from an only child, getting our every single bit of attention, to now having to stand in line and wait until the baby is taken care of. Now, I will admit, I give my dog a heck of a lot of attention so he is use to that, but a newborn baby is completely different. I am blessed that my child is very good about entertaining himself and I feel like he’s going to be an awesome big brother. He helps me so much as it is that he will find it fun to be my assistant. I pray that I can balance the two and make sure to give him the love and attention he needs, especially when I’ve only gotten an hour of sleep and I’m in so much pain I can’t see straight. Those will be the tests I will endure. Also, taking care of a newborn again, omg, I am so nervous. I remember how on alert I was for weeks after my son was born. Waking up every two seconds to make sure he was breathing and the second he started to cry I would want to know how to stop it. In return that created a very content baby. I would satisfied his needs pretty quickly whether it be a bottle or a change of diaper, and he learned quickly that things would be better fast and would only ever cry whenever he needed something. I am praying each day that this baby girl is the same way.
  3. Aside from the baby another goal I would really like to achieve is writing and expanding more of this blog. That seems to be my goal every single year and I just do not know how to expand on that. I really think I am going to bite the bullet and make this domain mine. For about $50 a year I can have my own URL, email, and have better freedom to creating the look of my blog. I really need to look into ads and some how figure out how to generate some money on this thing. I feel like I have a voice and unique outlook on life. Maybe if I can expand this blog into something more, I can also expand my You Tube channel. Which brings me to my new personal goal.
  4. My YouTube channel! Yes, I have one, My You Tube Channel!  it’s very small, only 66 subscribers but I have over 7,000 views on one of my videos so for a small time girl like me, makes me feel special! I’ve generated a little bit of money from my videos and would love to expand that more. The process of creating videos is difficult for me. First, I don’t have a proper camera for filming, so I am looking at different ways to properly film a video. Once I figure that out then I have to edit and upload…which uploading is ridiculous! The best way for me is to use the library WIFI because my internet is great for streaming on my Roku (thank the Lord!) but is horrible when it comes to uploading anything. So I will need to overcome these hurdles to just add more content to my You Tube channel. Part of me got a little discouraged because my most recent video hasn’t even gotten 100 views and it was for a popular trendy item. But that also could by why because it was so popular and there’s so many videos for it out there that mine isn’t getting views. I really need to plan different content and make more than just make up review videos because I honestly haven’t bought any new make up in a long time, lol.
  5. Of course this goal, that I struggle with throughout the year (even currently) is of course eating better. Planning more meals and eating more at home. Because of how I am feeling, especially lately, I find it so hard to keep track on what I am eating. There’s a million excuses in the book but I need to start to be more active with my eating. One way I am going to focus on it is by writing down my dinner meals. This way I have an active look on what I am currently eating and what we are having each week. So say I order pizza (like I did last night, lol) and then a couple of weeks later think I want to again, I’ll have it listed and go oh maybe I shouldn’t and do something else. My biggest struggle right now is grocery shopping. As I am getting bigger, it is getting harder and harder to make it through the whole grocery store. I will lay down and think oh it’s easier to just go get food rather than go through the process of the grocery store. The book I have also has a grocery list on the side so I’m hoping that will help as well. We saw see! I’ll continue to update on my progress as the weeks go by. The book is also great because it will be an ongoing list of dinner ideas in case I need some inspiration because we literally eat the same thing all.the.time.ugh.
